FORECASTING OF PRESERVATION OF QUICKLY FROZEN FRUIT AND VEGETABLES
 
The article gives the results of quality research of quickly frozen strawberry during its life-cycle. There have been defined the main stages of technology and transportation, during which the temperature is much higher than approved norms, and their duration is determined. There have been developed mathematical models of dependence of complex and group indicators on the duration and temperature of storage. The approaches and methodology of preservation forecasting of quickly frozen fruit and vegetable have been improved.
