THE QUALITY ASSESSMENT OF FROZEN TOMATOES AU JUS
 
There has been presented the estimation of quality of the frozen tomatoes au jus with pulp according to the developed scales and physical and chemical indices at all the stages of freezing and storage. There has been determined the optimal concentration of guar gum in the juice according to the total of complex of organoleptic physical and chemical quality indices.
