MODELING OF FRUIT JAMS RECEIPTS
 
There has been offered the mathematical model of calculation of receipts of cherry jam with addition of red currant, black currant, gooseberries, apple jams which contain the proper amount of pectines. The comparison of calculated and experimental quality indices proves that this method may be used in the production to reduce the time of research for obtaining new types of jams with increased nutritive value and high quality.
